Aloo Kurma
4 Short Green Chilies or 3 Long , cut as per your style.
1 onion, Chopped into small pieces.
2 small tomatoes chopped fine. (I microwave and remove the skin and smash the remains)
4 big potatoes – Cut into equal pieces.
½ cup olive oil
2 spoons of kuskus
1 spoon coconut grate
1 teaspoon Ginger Garlic paste
1 teaspoon Garam Masala
1 teaspoon Daniya power
Paste the kus kus and set aside.
Heat Oil in a cooking pan, add the cut chillies and onion and let it cook till light brown.
Add smashed tomato to the onion and let it cook for 5 mins.Add cut potato to the onion tomato mix and let it cook for 5-10 mins. Now add 1 tea spoon of Ginger garlic paste stir once and add the Kus Kus paste and Coconut paste to the potatoes and let it cook for 5 mins. Now add garam masala , Daniya powder salt and finally red chili powder. Mix all ingredients till potatoes are cooked well.
Cut parsley and garnish.
Your aloo Kurma is now ready.
